Chilled Cantaloupe Soup
I haven’t tried this myself but I’m excited to. I want to try it in the warm weather that is (hopefully) headed our way. It looks easy as well which is, in my opinion, better. I like to keep it simple.
Om asked me if this was a soup or a drink and to be honest it could probably be both. One of the reasons I like to keep things simple is because they’re often more versatile that way.
- 1 large chilled cantaloupe, seeded and cut into 1-inch chunks
- 1/3cup orange juice
- 4 lime wedges
- You could probably add a garnish of mint to this if you wanted to
- Place the cantaloupe in a blender, add the orange juice, and puree until well blended.
- Divide the soup evenly among 4 bowls. Squeeze the limes over the soup. Serve chilled. Maybe even with ice cream if you’re feeling especially adventurous.
